Crispy vegetables - easy Venetian homecooking recipe

Hello everybody! I have not forgotten my blog, even if I haven't posted much for ages... just not enough time! Let’s start cooking again with a very easy recipe: I've been cooking carrots/zucchini nearly every day for mostly 10 year now, as they're the vegetables my kids eat most easily, so I've tried them in every possible way: sauteed, steam-cooked, in soups, in pasta sauces, baked, stuffed... this time, I prepared a yummy variation of the sautéed version, with a crispy touch. Try it!

For 4 persons:

  • 2 carrots
  • 1 big courgette
  • 1 slice of sandwich bread
  • 1/4 onion
  • a little tyme
  • 4 Brazilian nuts
  • ground salt
  • olive oil

Put together in the mixer the bread, nuts, a tiny pinch of ground salt and thyme and blend the whole. Wash, peel and slice the vegetables and stir them with a little olive oil; add the mixture to it and toast it. Done! Of course, you can change the mixture with other ingredients, for instance using other nuts, garlic instead of onion or other herbs... all combinations are possible!
